Mrs. Renshaw’s Mifgrin Recipe
Ingredients for the Oatmeal Cookies:
1 cup unsalted butter, softened
3/4 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3 cups rolled oats
Ingredients for the Crème:
4 large egg whites
1 cup granulated sugar
1/4 teaspoon cream of tartar
1 teaspoon vanilla extract
Instructions:
Make Cookies:
Preheat oven to 350°F (175°C).
Cream butter and sugars, add eggs and vanilla.
Mix flour, baking soda, salt, and cinnamon; combine with wet ingredients.
Fold in oats. Drop spoonfuls on baking sheets.
Bake for 10-12 mins. Cool.
Make Crème:
Whisk egg whites, sugar, and cream of tartar over simmering water until warm.
Beat until stiff peaks form.
Add vanilla.
Assemble:
Spread marshmallow crème on one cookie, top with another to form a sandwich.
Repeat.
